Fried zucchini is a favorite Greek appetizer served in most of Greek restaurants usually with tzatziki dip.
Fried Zucchini

INGREDIENTS
- 2 medium zucchinis
- 2 large eggs
- 3⁄4 cup all-purpose flour
- 1⁄2 cup shredded parmesan cheese
- 2 cups seasoned breadcrumbs
- Oil for frying
INSTRUCTIONS
Trim the zucchini ends and cut them into 1⁄2-inch slices. Beat eggs with salt and pepper. Merge parmesan cheese, breadcrumbs, and salt and pepper to taste in the other dish.
Fill a 1⁄2-inch deep pan halfway with oil and heat over medium heat. Dredge zucchini in flour dipped in eggs and then dredged in breadcrumbs. Continue with the leftover slices.
Cook a few zucchini slices in the pan for 2-3 minutes per side. Using paper towels, absorb any excess liquid. If desired, season with salt.
