Gigantes plaki is a classic Greek dish of baked large beans, cooked slowly in a rich tomato sauce until nice and tender.
Gigantes ( Baked Lima Beans )
Total time: 90 minutes | Serves: 4 to 6 people
INGREDIENTS
- 1 packet (16 oz weight) of dried lima beans, overnight soaked in water
- 2 tsp tomato paste
- 1 cup olive oil
- 2 minced onions
- 11⁄2 tbsp. minced garlic
- 1⁄2 tsp. cumin
- Salt to taste
- Pepper
- 2 leaves bay leaves
- Feta cheese
INSTRUCTIONS
Add beans with water and leave overnight. Then strain water, add beans to a pot with new water, and boil them for 20 minutes. Then strain them and set them aside. Set the oven range to 375 degrees F to preheat. Add oil to the pan, and sauté the onions, garlic, tomato paste, salt, pepper, and cumin over moderate heat for about 10 minutes.
Fill a 9*13 rectangle baking dish halfway with beans. Stir in the sauce, add some water and mix well.
Bake for one hour, stirring occasionally, and add more water if the mixture appears to be dry.
Serve with feta and enjoy.
